We couldn’t get enough of the sweet strawberry fudge nestled inside the crisp chocolate shell—it was unforgettable. I knew I had to recreate that delicious experience in my own way, which led to these chocolate-covered strawberry brownies: a rich, indulgent twist on a classic combination.


CHOCOLATE COVERED STRAWBERRY BROWNIES

If chocolate-covered strawberries and brownies had a baby, this would be it—and yes, it’s just as amazing as it sounds. These Chocolate-Covered Strawberry Brownies start with a rich, fudgy brownie base that’s perfectly chewy with that signature crackly top we all love. On top, there’s a thick layer of sweet, creamy strawberry ganache that’s bursting with real berry flavor and adds a pop of pretty pink. Each bite is a perfect mix of deep chocolate and bright strawberry—like your favorite Valentine’s Day treat, but in brownie form and good enough to eat year-round.


INGREDIENTS

Brownie Batter

  • Light brown sugar

  • Eggs

  • Vanilla bean paste

  • Freeze-dried Strawberries

  • Powdered Sugar

HOW TO MAKE THIS DESSERT

Step 1: Prepare the Baking Pan

  • Preheat your oven to 350°F (175°C).

  • Butter an 8x8-inch baking pan and line it with parchment paper, allowing some overhang for easy removal.

Step 2: Make the Brownie Batter

  • Melt the butter in a saucepan or microwave-safe bowl.

  • Whisk in the brown sugar until the mixture is smooth and well combined.

  • Add the eggs one at a time, whisking vigorously after each addition until the batter becomes lighter in color and slightly thickened.

  • Stir in the vanilla bean paste until fully incorporated.

  • Gently fold in the cocoa powder and flour just until no dry streaks remain.

  • Fold in the chopped chocolate bar pieces for extra richness.

Step 3: Bake the Brownies

  • Pour the batter into the prepared pan and spread evenly.

  • Bake for 25 to 35 minutes, or until the top appears crackly and a toothpick inserted into the center comes out with a few moist crumbs.

  • Remove from the oven and allow the brownies to cool completely in the pan.

Step 4: Prepare the Strawberry Glaze

  • Grind strawberries into a food processor until powder form

  • Combine the powdered sugar, powdered strawberries, butter with a hand mixer until well incorporated.

  • Add the milk and vanilla until glossy glaze is formed.

Step 5: Top and Finish

  • Once the brownies have cooled, pour the strawberry ganache over the top and spread it evenly.

  • Let the ganache set completely at room temperature or in the refrigerator.
