Controversial opinion, but I’ve never been a big pie person… especially the classic holiday ones like pumpkin or pecan. So when I started seeing bakers make pecan pie brownies, I knew immediately this was the Friendsgiving dessert I could actually get behind. Everyone loves a good brownie, and the pecan topping gives you all the caramel-y, crunchy, toasty flavors of pecan pie without having to commit to a whole slice of pie. It feels festive, it tastes ridiculous, and it’s the kind of dessert that keeps people coming back for more.
PECAN PIE BROWNIES
Pecan Pie Brownies - your next go-to Friendsgiving dessert. These are a perfect mash-up of a fudgy chocolate brownie and the best part of pecan pie: the gooey caramel filling. The brownie base is dense and chewy with little pockets of melted dark chocolate. For the filling, most recipes call for corn syrup, but the honey replacement gives it an extra sweet and toasty flavor that surprisingly pairs well with chocolate. This is decadent, sticky, and perfect with a scoop of vanilla ice cream on top to balance all the flavors.
Ingredients
BROWNIE BATTER
1/2 + 2 tablespoons of salted butter
1 1/4 cup packed light brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup cocoa powder
1/2 cup all-purpose flour
1 Ghiradelli Dark Chocolate Bar, chopped
PECAN CARAMEL TOPPING
1 1/2 cup pecans
6 tablespoons of butter
1/3 cup honey
1/2 brown sugar
1 tsp vanilla bean paste
Instructions
Grease and line an 8x8-inch baking pan with parchment paper, then set it aside.
In a microwave-safe bowl, combine the butter and sugars. Microwave for 30 seconds, then whisk. Repeat this process until the mixture looks glossy and slightly grainy.
Transfer the mixture to a large mixing bowl and whisk in the eggs one at a time, beating vigorously until the batter becomes lighter in color. Stir in the vanilla extract.
Gently fold in the cocoa powder and flour until just combined, then stir in the chopped chocolate chunks.
Pour the brownie batter into the lined pan, and spread evenly with a spatula.
Parbake this for 20 minutes.
While brownie batter is baking, cook the pecans, butter, honey brown sugar and vanilla and simmer for 3-5 minutes.
Spread the mixture evenly on top, and bake for another 15 minutes.
Cool completely before cutting into 9 squares, then enjoy!
