Since it’s fall, I started experimenting with classic autumn flavors and stumbled upon my new obsession: pumpkin and blueberry. The cozy sweetness of pumpkin and the tangy pop of blueberries might sound unusual, but together they’re pure magic: sweet, tart, and perfectly balanced. The result is Blueberry Pumpkin Muffins that are moist, flavorful, and totally irresistible. This recipe is delicious any way you slice it - as muffins, a coffee cake, or even a sweet loaf.

BLUEBERRY PUMPKIN MUFFINS

These Blueberry Pumpkin Muffins are soft, sweet, and full of cozy autumn flavor with just the right pop of tart blueberries. Each bite is perfectly moist from pumpkin puree, lightly spiced with cinnamon and pumpkin pie spice, and crowned with a buttery brown sugar streusel that melts into the muffin as it bakes. Once they’re out of the oven, a silky pumpkin-spiced glaze ties everything together for that bakery-style finish. I know some might be skeptical of the blueberry-pumpkin combo, but I promise it is the pairing you never knew you needed and cannot live without once you try these.



INGREDIENTS

Muffins

  • 1 cup pumpkin puree

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1 1/4 cups all-purpose flour

  • 1/2 cup vegetable oil

  • 1/4 cup milk

  • 2 eggs

  • 2 teaspoons vanilla extract

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 2 teaspoons ground cinnamon

  • 1/2 cup of small blueberries coated in flour

Streusel and Glaze

  • 1/2 cup of flour

  • 1 tablespoon pumpkin pie spice

  • 1/2 cup of brown sugar

  • 4 tablespoons of unsalted butter, melted

  • Glaze: 1/2 cup powdered sugar

  • Glaze: 2 tsp whole milk

  • Glaze: 2 tsp pumpkin pie spice

Instructions

How to Make Muffins

  1. Preheat oven to 375 degrees Fahrenheit.

  2. In a large bowl, add the pumpkin puree, sugars, eggs, vanilla extract, milk, vegetable oil until well combined.

  3. In a separate bowl, combine the dry ingredients: flour, baking powder, Cinnamon, and baking powder. Add to the wet mixture until just combined. Fold in the blueberries.

  4. let the batter rest for 30 minutes, and make the streusel topping in the meantime.

  5. line about two muffin trays with 12 liners. Scoop batter into each liner and sprinkle the streusel on top (see below for streusel instructions). Bake for 22-25 minutes, and allow the muffins to cool before drizzling the glaze over each muffin.

  6. Enjoy!

How to Make Streusel & Glaze

  1. Whisk together the flour and sugar. Add the butter and mush everything together with fingers until large clumps form.

  2. Glaze: whisk together the powdered sugar, pumpkin spice, and milk together, one tsp at a time until you achieve the desired consistency.
